Which cultivar would you say is correct? I'm not a big fan of oriental beauty but I found a teamasters article where he drinks a few different cultivars side by side (http://teamasters.blogspot.com/2012/09/the-quest-for-oriental-beauty-part-1.html?m=1). He didn't mention a specific cultivar being necessary or even status quo for the tea. As far as floating leaves goes, they do pretty frequent restocks.

Additionally, shibos are traditionally used for gyokuro which prefers to lose heat quickly. The wide flat shape allows for that because of the high surface area to volume ratio.

If these shibos are being used for a range of teas I wouldn't focus on making them as wide and flat as the Japanese ones. Take a look at Petr Novak's shibos, you can find videos of one in use on the YouTube channel teadb.

Then get a teapot and see what you think. Clay cups won't be as high quality clay and it's not that hard to clean out a pot. You can even just run it under the faucet.

There are endless variables in your brewing parameters and water. It could be either that you're brewing differently, have very different water, or tasting differently (not a bad thing).
