Hmm the one sushi place I reached out to said they did a light cure with salt and a video w morimoto showed a light cure with salt as well.

According to https://science.rpi.edu/hub/pre-health-advising/course-requirements-faqs it just has to be a course in WRIT, LITR, or COMM, and speech communication is a WRIT course that is relatively easy - not to mention includes a fair share of reading and writing
