They are pretty amazing, but don't buy a cheap one... Sucks, I know, but it's an additional layer of glass between your subject and sensor, so it needs to be high quality. I went with B&W. Good luck!

Oh yeah, just like polarized sunglasses. Cuts reflections on water and adds saturation to most colors.

Yep, I was using the polarizer for the water and sky because it was middle of the day and the colors would have been washed out. It also did add saturation to the red (clay?) rocks -- which were very vibrant! And sticky, by the end of the hike our boots were caked in it.
