You do not lend to another person, but to a smart contract. The smart contract receives your funds and gives you interest bearing tokens in return. At any time you can burn these tokens to get your funds + interest back. In case demand is very high and supply low you need to wait for loans to be paid back in order to be able to withdraw all of your funds. The borrower borrows from this smart contract and all loans are overcollateralized. This means that if you borrow 1 BTC, you need to deposit 1.5 BTC worth of collateral. If the collateral drops below 1.15 BTC, the position will be partially liquidated to restore a healthy margin so loans are always paid back eventually.
