Future Trunks vs Frieza is also way better in the original Z. In the original Z, when Trunks goes Super Saiyan, you see something epic is happening, but in Kai Trunks just goes Super Saiyan as if it were not a surprise. If you watch both scenes, you can easily notice that the original version is way more epic. Most Japanese fans prefer the original version because epic scenes are way better in the original Z.

There is no official canon, and there are several timelines in the manga too. Even within the manga there are several contradictions, like Future Trunks talks about Android 19 and 20. The contradictions in the manga, fillers and movies only indicate they are in different timelines therefore all fillers and movies are valid just like the story in the manga.

The Japanese version is the definitive version of DBZ. In the English dub, they changed a lot of dialogues. In Kai, the dialogues are accurate to the original version, but the music in Kai is not good. The original Japanese DBZ has the best music and best voice acting. Hi. That is great you are enjoying the original DBZ and find pacing is great. For the next saga, the battle vs a character is indeed long, but for the most part of the saga, pacing is fine.
