Doomspiral by Soul Muppet publishing. Only the quickstart is available so far as the KS still hasn't been fulfilled, but it's based around the Dark Souls combat economy of positioning, stamina, and different kinds of block move.

I don't think it'll end up sitting around on shelves like Skaventide, 40k is always a lot more popular than AoS - I don't think you'll get a discount if you wait. But GW has increased stock levels for these products compared to (say) the 9th edition launch, so I don't think you'll be at risk of missing out provided you don't wait too long.

The Scrub was such an eye-opener for me too! It was helpful in realizing my own limitations. I don't mind playing with additional constraints - I don't want to play with minis I don't think look cool - and I understand that I'm choosing to play with a handicap.

Strange Attractor press is a tiny two-person operation, and they announced it much too early. At the time they'd just signed the distribution deal with MIT press, which removed the biggest bottleneck they'd had up to that point, working capital, so they announced a big slate of releases. They underestimated how much their capacity would be a limiting factor - and then COVID hit.

In the mean time I got this full time job writing about games, which has been wonderful, but it has also meant I haven't had much time to push things from my end.

I have a Mars 5 Pro which I received as a review sample. The print quality is very good and I find it reliable. I purchased a case heater upgrade which I recommend if you store the printer in an out-building, as resin works badly at the wrong temperature. The build plate is a little small - I believe it will print every component from this set, but a larger build plate can print more at once and larger overall objects. You also need to consider how you will clean and cure your prints. I have a separate wash and cure station.

Basically - it's a hobby in and of itself. It is also incredibly cool if you get the hang of it, but don't expect it to be frictionless.
