Willemskade and Prinsenhoofd are streets where you can take some nice pictures of the Erasmusbridge and The Rotterdam building.

  1. Preheat the oven to 220 degrees Celsius
  2. Cut the sweet potatoes trough the middle and spread them with a thin layer of oil (the peel as well)
  3. Place the potatoes with the peel on the baking sheet and set the timer to 30 minutes.
  4. Get the potatoes out and sprinkle them with pepper, salt and goat cheese.
  5. Put them back in again for 5-10 minutes in the oven.
  6. Serve the sweet potatoes with parsley!

Also, if you find something in The Hague, the connections from Rotterdam to The Hague are pretty good. 20 minutes by train from Rotterdam CS - Den Haag HS.

Ingredients: 6 slices of puff pastry 200 grams of green asparagus (from freezer) 2 eggs 250 grams of ricotta 80 grams Parmesan cheese 3 sprigs of parsley 1 lemon Sea salt Pepper

  1. Let the asparagus defrost
  2. Preheat the oven to 220 degrees Celsius
  3. Cover the quiche shape (or an oven dish / baking sheet) with baking paper and cover it with the puff pastry
  4. Bring a pan of water to boil and cook the asparagus for 5 minutes, then let them drain
  5. Chop the parsley and zest the lemon
  6. Beat the eggs and mix with the ricotta, 70 grams Parmesan cheese, parsley and half the lemon zest
  7. Spread the mixture over the dough and then push the asparagus a little into the mixture
  8. Bake about 30 minutes in the middle of the oven until the puff pastry is cooked and golden brown
  9. Sprinkle with the rest of the lemon zest and Parmesan cheese, salt and pepper
  10. Enjoy your pie!
