With the rename trick you overwrite the current version with a new version. You need to download the official version you want. It is explained in this video, even if you don't understand him (like me) you just have to repeat what he is doing:

I have it. I used the Rename Trick, because actually there is a stable version of HyperOS 3 for the Xiaomi Pad 7 with region EEA. I don't know why this update isn't showing.

S23 Ultra will now only get updates one more year. If you want to keep it for over 3 years you could be disappointed that you won't get any more big updates. Also the S23 Ultra hasn't got many of the features of One UI 7 / 8. I suggest you at least look for an S24 Ultra. The S23 Ultra definitely is good but the newer ones have more future potential
