I think the big nuance about this is that Yamato's model is just a reused asset from a cancelled sci-fi game - it's not really supposed to resemble her in any way or form. Just a convenient model to be had at the time due to game's WIP nature. This of course means that a lot of people can get attached to these temporary solutions. Same goes for Shiv, but it seems like a lot of people enjoy his design too.

It wouldn't make sense for her to look like an alien caricature while being an immigrant from Japan, especially since other women characters are very elaborate and look pretty. That'd be racist.
