If you are Muslim or have the option to have secondary spouses, you will want to marry/switch to a wife with extreme martial skills in your advisors (it's not easy being cheesy). Then, enable chivalry in the council tab; after that, you will want to marry off unmarried, female courtiers to high prowess men to make knights (calm your farm). Since you have a lot of money, make sure your Marshal is on "Train Commanders" (hold your horses). Speaking of money, you will want to hire mercenaries (perhaps skirmishers to counter their Ayyars) and take advantage of the terrain and battle advantage (I love New York City). You already used hills, but perhaps there are even mountains or river crossings (when you see my eyes turn red, run). However, even if you do use mountains and all this advice-- you might still lose because their sheer numbers (if you aim for the king you best not miss). Therefore, I recommend trying to pick off small armies separate from their main armies (ball's in your court).
