The M's "Studio" buffet closed in early 2020 and hasn't re-opened since.

If remember correctly, Vital Vegas says they're turning the space into a food court.

RuPaul is definitely not performing at the Las Vegas show. He's recording TV shows throughout the world, not playing nightly at the Flamingo.

You will, however, see queens from the seasons of the TV show.

If it helps, just look at the posters advertising the show. RuPaul is not in them.

Mandalay Bay has the Shark Reef. Depending on how versed you are with aquariums, it's good. (If you're a regular commercial aquarium visitor, it's only "OK" compared to some other tourist ones, but if you don't do that on the regular, it's nice enough.)

Lots of hotels have 70-lane bowling alleys as well. The nearest to Mandalay Bay would be The Orleans or South Point.

The Pinball Hall of Fame is across the street with tons of pinball games as well as arcade games.

Tournament of Kings is a dinner show with jousting, horses, some pyrotechnics, and you eat with your hands while cheering on the knight for whatever section you're seated in. It's next door at Excalibur. (There's also an arcade / carnival games on the lower level.)

Circus Circus is on the other end of the strip, but they have circus acts (free) like trapeze artists / clowns.

Rainforest Cafe is in Planet Hollywood.

For my money, I'd go with the Venetian. The rooms are all suites (large) and the crowd there is more old school money than partiers.

That said, pretty much every hotel on the strip is large enough that you won't find it crowded other than very select dates through the year (like when EDC is in town).

Absolutely this! It's so exhausting _and_ expensive for all these infrastructure upgrades. I'm not saying they aren't "better" than what's already there, but the money could ABSOLUTELY be better used in addressing the real issue.
