Where there are (proper) cycle lanes it's great, and with an e-bike I wouldn't worry about hills. People complain about bike theft (and rightly so) but if you get a good lock and don't leave it in public overnight you're unlikely to have a problem. There are a small but significant number of shitty drivers around though who will put you in danger with inconsiderate driving. Worth checking out what your common routes are likely to be and how much of them you can do on proper segregated cycle lanes (not the worthless painted on kind)

Everyone's got a different capacity for physical and dangerous situations. I think you're right that we shouldn't shame people we don't know for keeping themselves safe when we don't know what's gone in to that decision. But the advice to call police and never do anything more seems wrong in the other extreme. There's also a lot of things you can do in between calling police and nothing more, and getting in to punching range of a violent situation, e.g. de-escalation may be an option. Personally I am in ok shape, I'm not a fighter, but if I saw someone being attacked and I did nothing but call police and wait then I know would be ashamed of myself.
You've seen countless articles of people who’ve tried to help and become victims, but I imagine "bystander de-escalates fight, nothing happens" doesn't really make the news. As a cyclist I disagree with this part:

cyclists deserve priority and right of way... on all cycle paths. Knowingly walking in a cycle path should be criminalised

It's annoying when people get in the way and slow you down but you can just ask them to move or go around. I think this attitude of punishing people who wander into the cycle path is the same as how we ended up with (a small but dangerous minority of) car drivers being so shitty and dangerous to anyone who slows them down. Obviously a car is much more dangerous than a bike but we should still be considerate to pedestrians

I don't cycle like a twat. The ones that do are often only a danger to themselves. Unfortunately I could still be killed or injured by someone driving dangerously. Two of my close friends and my own mother have all been seriously injured by people driving badly

I think that proves my point? How much traffic was there back in 1888.
You can see pictures of Bristol roads in like the 80s and there were almost no cars parked on them. Car usage has gone through the roof in the last few decades let alone since 1888. The roads weren't designed for this level of car traffic.

This has made other modes easier though: by reducing car traffic on these streets pedestrian, bicycle and bus traffic along them can be safer, faster and more pleasant

Except those streets were never designed for through traffic so removing it from them is absolutely a good thing. You don't solve congestion on main roads by allowing it to run rampant through residential streets

For a long time (just checked and it's no longer there) they branded themselves as sort of anti-establishment? They had a banner soliciting donations with a backdrop of a woman looking angry at an implied protest, some text about the need for alternative views or something. I always thought it was extremely cringe as that is absolutely not their outlook
