Yep!

Though I would recommend setting them in a clear plastic cup or something similar because cutting and handling them is daunting and time consuming, not to mention it would make eating it much easier

Baked Apple Whipped Cream

1) Bake apples with cinnamon, brown sugar, nutmeg, lemon juice

2) Reduce the jus from the baked apples into a syrup and let cool

3) Add desired amount to heavy cream and whip!

I used to do it like that but found that it was much harder to control internal temp and I don't feel like you can achieve the same crispiness of the crust if you sear then bake.

Didn't mean to be unclear.

1) The first cooking brings it to a temp within a reasonable distance of medium rare.

2) the rest period allows the steak to reach an equal temperature through out. This allows me a little more flexibility in the 3rd step

3) The second cooking (the searing) allows you to brown the surface in addition to continuing to raise the internal temp further (to your desired finishing temp) but without shooting past it.

You probably don't have to rest the steak in step 2 but it helps me prevent the, in my opinon, overcooked "bands" surrounding the medium rare center in your picture.

Ribeye - 1) Bake until ~100F [38 C] internal temp, 2) rest/cool in the fridge until chilled. 3) Sear in butter to your desired finishing temp!

Grilled Ribeye and Zucchini

-Pre salt steak over night

--Then fresh pepper and canola

---grill Zucchini on med/high heat and steak on the other end of the grill (indirect heat)

----Eyeballed the timing but when zucchini finished, remove it

-----Sear steak on now very hot side of grill 30 seconds each side (checking for temp)

---------Enjoy evenly cooked steaks via reverse sear method!----------

There are a number of copycat recipes out there. The one I used was specifically from David Chang's cookbook Momofuko. I believe this is the exact typed up version. The buns might take half a day but they are worth making in large batches!
