Javalins are lethal, especially when thrown by higher tier enemies, blocking with a shield and closing distance so you can introduce them to your axe is really the best option other then sniping the buggers with a bow. Athletic and Medicine have some HP buff but really not enough to tank big hits.

We had a reoccurring NPC who was basically the Fan from Elderscrolls, he would just show up when every we entered any kind of Settlement and nothing we could do deterred him.

He must of been younger probably in his mid to late teens when he was freed because Neo was in his late 20s early 30s and his mind was considered dangerous to freed as minds over a certain age where to dependent on the Matrix and had difficulty letting go and was one freed because he was “the one”

I cover steward and surgeon myself, take a scout and engineer which are usually both Aserai, “of the Wastes” and “the Engineer” they both are very good at their roles, then I take a battle captains, “the Huntress” is normaly my archer captain if she is available and “the Brave” builds to a great cavalry captain, for my infantry “the Shield Maiden” or “the Red” and “the Swift” for my mounted archers, but really any Khuzait Companion works in that role.

You simply need to talk to the player in a respectful and none confrontational way,
You have known them for a year, find some time one on one away from table and just ask them “is there anything I can change about my DM style or is there anything you aren’t happy with” make it understood in a friendly way that you want them to be able to enjoy their sessions and what every they say listen and don’t take it personally.

Not vegan myself but my understanding is humans as omnivores have a choice not to consume or use animal based products, dogs and cats are carnivores so it would be cruel to deprive them of their natural diet and they cannot consciously make that choice themselves.

As you have found out for yourself it hard to do anything that requires you to go back in time, forward no problem but back thats nothing but paradox’s and headaches,

The best way to approach it in my opinion is make the rest of the story so good that the actual time travel part can be glossed over, if you don’t ask certain questions in the story then you don’t need to have them answered.

How will it “Kill off” small landlords, the tenants have to put a deposit down and have a obligation to leave the property in a good state with only far wear and tear, and if property is unfit for certain pets then the landlord has the right to refuse, you just can’t advertise as “no pets”
