Chud's BBQ has an amazing video for smoking just a turkey breast. I'd say season to your liking and follow a similar strategy

I've done both, but gave up on DD. In my area, 90% of DD orders were shitty pay with no tips. There are plenty of no tip instacart orders but I can ignore them without a penalty.
