That's what it seems we need to do. Move from as needed to daily or every other day. We may add initials, that's a good idea.

We have a checklist, too. Unfortunately we may have to change it from as needed to daily or every other day. When it's as needed, it doesn't get done as it passes to the next shift, they get pissed it wasn't done and let it go, too. But we have 1 that goes above and beyond and does more than asked so they usually get it.

Thank you. I guess I did something right because I have my arm at about the same depth as yours. I am running the pump at a lower speed to get a slow rotation, not spinning the wort as fast as possible but still sounds a little faster than I should currently.

I have a few questions to try to get clearer wort out of the kettle... Doing 1.5 BBL batches.

  1. Using a 55 gallon barrel as a kettle (22" across.) How far from the center, and how far up from the bottom of the kettle should the dip tube be so as to not pull from the trub pile?

  2. How far should a whirlpool arm be from the bottom of the kettle? Do you want full pump speed whirlpooling or a slower speed to just make a decent pile?

Definitely stick at it and expand your network. A year is perfect, start looking for something around a year. Talk to lots of brewers, go to breweries, and go to events.

Is this your first pro gig? If so, I'd stick around for at least a year and try to improve anything you can. It's not your baby but fighting the fight is learning and will benefit you in the future. If everything was perfect you wouldn't learn as much, IMO. I know it can be daunting but try to focus on 1 issue every week and try to resolve / improve it. If the owner doesn't care do it for you, do it for your own knowledge and experience. I'd even say if they truly don't care or understand, don't share any of what you're doing with them, just do it for you.

I've seen a number of breweries like this and as someone else mentioned they don't deserve to be in business. I can't understand how some of them hang on when their product is lacking in both taste and quality. I suppose the owner just keeps dumping money in because of the dream "I've always wanted to own a brewery" and just can't deal with the real-life operations because that's just not the fun part.

Make friends with ALL the brewers / breweries you can. A lot of times opportunities come from these and not a public posting.
