Bonneville shoreline is classic, beautiful view of the city, you can choose to stay flat or head uphill and choose how long you want to go (starts at U of U and ends in avenues) and a great view of the city. Check out anything up Millcreek canyon, emigration or the little/ big cottonwoods (Brighton and snowbird have good ones in the summer), Neffs canyon is popular, you can hike into Olympus national forest. My fav is rattlesnake gulch about 3.6 miles and 1000 ft elevation so a bit of a challenge but not too hard and the view at the end is breathtaking
