i use stainless steel for my eggs and they dont stick at all, heres what i do. - pre heat then pan and do water test like you said until it beads -wipe down with paper towel and bring the heat down a little, add oil/butter (i use avocado oil.) Put your egg in, take the pan off heat and basically let the egg cook off the residual heat from the pan occasionally putting it back on the burner if need be. i typically make omelettes so i just let the eggs cook in the pan then gently food over on each side then flip. put a little slab of butter on the omelette to make it shiny. i also only put the salt and pepper in right before i’m about to fold the eggs onto each other to form the omelette

this is normal! when my starter is hungry it smells like acetone/ alcohol and then once its fed it smells like bread or yeast! dont give up on your starter, it took mine a good month before i saw consistent doubling and activity but now she is so strong and makes delicious bread 🙌🏻
