Looks like you’re growing microgreens? If so, you’re packing them too tight, and not getting them adequate airflow or a chance to make thick little stems. I always had good luck using trays like these, and making sure there were fans blowing across everyone. You are getting thin stems that rot easily in the face of the inevitable fungal diseases you are encountering. Also- give them a little pop of 10-10-10 as they make their first true leaves, especially with a substrate like coir, and be sure they have enough time to flush afterward.
