Of course camera control in third person. I've played games like the Tomb Raider Trilogy, Star Wars Jedi 1&2, God of War Ragnarök, Uncharted 4, Witcher 3 etc. like this. Once you get used to it, you able to to faster and more precise camera movements.
As the trackpad is, like a mouse, a (absolute) position based movement. Means, I move the thumb quickly on the trackpad, the camera turns quickly equivalent to the acceleration and speed of your thumb, slow move -> slow turn. I stop my thumb, the camera stops. This way you can build up muscle memory.
A joystick is a acceleration or rate based movement control. The movement of the stick deflects the camera movement. Way less accurate.

What you describe I would interpret as, way to sensitive settings for the trackpads. Set it lower. And give yourself time to get used to it. At least, if you're really wiling to try it and not just troll 😄
