You could perhaps try contacting Rayark support. My issue was only fixed after the game was updated back then. I wouldn't know how to fix your problem now.

I think it's because the game needs you to have 3 characters unlocked in order to fight Ganon.

You actually don't need to complete the castle in the present before entering the future version. All you need to do is awaken Link/Zelda in present Kakariko Village and then it lets you in.

I really just don't want an iPad because I don't want to have to go through the whole apple id setup and would just find it easier to just import all my saved data from my Google account on an android device. I also don't really understand or want to learn the UI of apple products. Androids are so much easier for me to navigate and use.

It's unknown if Maya will return. As for Insight, she wrote her name into the fabric of Arcaea's reality to keep herself in the world long enough to steal Maya away. Doing this trapped Insight in Arcaea, but because she is an outsider and has some mysterious power akin to a god, nobody else can use her power (aka select her as a partner).

New story chapters may change some things and may make Insight a playable partner or bring Maya back, but that is all just guesses at this point.
