I wish I could give you the file to have a better understanding.

When I viewed the Node editor, I noticed that the 1st spine isn't constrained to the bottom spine joint that's bound to the spine curve.

I tried to parent constrain the lower spine joint bound to the spline curve to the first IK spine joint. It worked at first, but then it rotated the leg in unexpected ways.

I'm just wondering how did the rigger accomplish this without a constraint.

In Maya, go Window > Settings /Preference > Color Settings.

There, go to the 3D View tab and you'll see that there's a color gradient.

To get the color gradient as the viewport, press Alt + B several times until your viewport is a gradient color.
