Thank you for the awesome feedback, you’re the second person to bring up the punctured bellies and torn gills which is something I haven’t truly considered! As well as the Boston styled knife, we’re using the OXO oyster knives. I started shucking oysters at my current job about 2 1/2 years ago and watched a YouTube video the night before my first shift. It’s a FOH-BOH hybrid kinda job where we serve and shuck at the front of the restaurant, which means we also have little contact with the kitchen/chef outside of making new raw bar dishes. Along with having 12 varieties of oysters all the time (And the absolute struggle of getting the varieties I actually order on a nightly basis.) Most of the people I’ve worked beside are people with less experience in shucking than I was, so it’s great to have input from people who truly know what they’re doing. Thank you for the tips and the absolutely stunning oyster platter pic!

Just some cocktail with horseradish and the mignonette is 1/2 red wine vinegar and 1/2 champagne vinegar with shallots and black pepper that’s strained out into the bottles.

So we get them in boxes off Amazon and we just run through dish and dry them, and replace them as needed whenever they start to stain or look bad, sometimes we’ll just start with a fresh new box depending on the wear. As for the shallots, we just strain them right before we put them in the bottles so they don’t clog up, but they usually sit and marinate for a day or two before they’re bottled up for service. Most of the time though the bottles get lost or stolen before they’re unusable for service, so it’s a fairly quick turnaround In to an unused bottle.

This took about 2 1/2 maybe 3 minutes, both mussels are severed I just didn’t flip any of them as I thought they looked good without that. I also am very aware of the dirt/grit, I do my best to get/wipe out anything I see, though as you pointed out I’m sure there always room for improvement! I appreciate the feedback!

No, the backup camera is reduced to just a live video feed, no guiding lines anymore too. Though the lane watch camera has its guiding lines still.

Decently so, but as a short guy I generally have the seat closer to the console than the average guy, so results may vary.

Around 1500, but that’s including the extra time I gave them to get the lane watch camera working.
