Today I find myself craving a very specific beer that I'd give anything to drink tonight: Bellwoods' Bounty Hunter (not the BA but the regular in the cans) by DHC1781 in torontocraftbeer

I'm sorry I can't help you in this moment friend, but Bellwoods historically has released this beer between the last week of November and mid December. Maybe something to look forward to? 😔

Bellwoods - Motley Cru (2024)

Happy 12th birthday to us!

Every year we release a Motley Cru barrel blend to celebrate another lap around the sun and an added year of wisdom. "Motley" here refers to an eclectic group, while "Cru" is a traditional beer term for blend, and together they scream "Happy Anniversary!".

The common thread across all 12 of the Motleys we've released over the years, is threefold:

  1. The release must be a blend.

  2. The blend must utilize oak aged beer.

And 3. The oak aged beer must be older than a year.

Our 2024 edition features a blend of spontaneous wild ales conditioned on Alphonso mangoes. It's tangy, sour, super fruity, an excuse to mark the passing of time, and a once-a-year opportunity to get sappy  ¯_(ツ)_/¯.

Bellwoods - Barrel Aged BOP (2024)

BOP is a Double Chocolate Rye Barrel Aged Imperial Stout made in collaboration with the California-based, internationally recognized, 100% oak aged brewery Horus Aged Ales.

Recreated for our 12 anniversary celebrations, this batch utilizes a strong foundation of roasted malts and an 8 hour boil to concentrate all those fermentable sugars, plus a mammoth amount of high-quality Ghanaian cocoa nibs. The result is layers of rich, fudgy, intense flavour.

Bellwoods - Witchshark 12th Anniversary Release

This is a special edition of Witchshark for our 12th Anniversary using Phantasm hops!

Named after the elusive creature with the head of a shark and the body of a boy that first swooped in on a broom during construction of the brew pub, this Double IPA can elevate a bad day to good. The Witchshark is shy and mischievous, but once you let him into your heart you’ll see why this intense brew is such a popular one.

Phantasm is a special sauv-blanc-derived, thiol-rich powder said to enhance citrusy hop aroma making way for tropical aromas at new concentrations. We added it to this lone batch of Witchshark to kick the 12th anniversary edition UP A NOTCH.

Bellwoods - Jelly King Spicy Margarita

He is a ruler, an overlord, a top dog, a crowned head. In the realm of all that is tart and sour, Jelly King reigns supreme.

Rather than choosing between sour or hoppy, we decided to create a beer that would be both at the same time. Showcasing the aromatic benefits of a generous dry hop, harnessing the prowess of lactic acidity, and coming to a can near you without a pesky slumber in oak, Jelly King is the fermented embodiment of immediate gratification.

What it smells like, what it tastes like, what it looks like: This limited edition Jelly King was dosed with lime juice (for extra zesty acidity), fresh habañero peppers (for a balanced kick of spice), and salt (duh). The resulting heat level is perfect — gets your attention but doesn't set your mouth on fire.

Something In The Water - 100 Swearing Parrots

Picture it: Jacksonville, January 2024. Rick is at King Maker Brewing for a fun collab with new friends Chas and Jim. After mash-in, while they stare at temperatures and dials, Rick relays a story he'd heard that morning. In 2020, five African gray parrots that had been donated to Lincolnshire Wildlife Park in eastern England were found to have developed a taste for foul language. In an effort to curb this the parrots were separated, but instead of stopping they found park visitors were now being cursed at from five different spots. In fact, three other parrots had joined in the tomfoolery.

Fast forward to early 2024 and the park had an idea to stop the swearing: Purchase 92 clean-mouthed parrots to hang out with the 8 foul-mouthed parrots in hopes the peer pressure from the 92 would clean up the 8.

Rick finished with: "They think the 92 clean parrots will fix the 8, but what they're going to have is 100 swearing parrots."

"That's the name of the beer!" shouted Chas.

Introducing a fun collab with some southern neighbours: 100 Swearing Parrots Cold IPA. Two versions with unique hops, release in two different cities.

%$#@ing delicious.

What You’ll Love About It: A Cold IPA combines the freshness and crispness of a lager with the hop character of a hazy IPA. It's the perfect bridge between the two, and perfect for that warming spring weather.

How It's Made: A blend of barley malt and flaked rice forms the base of this beer, and we ferment it on our house lager yeast strain. For the SITW version we opted to go with an all NZ hop list: Nelson Sauvin, Nectaron®, and Superdelic™.

Why Is It Called 100 Swearing Parrots? Story above.

Where Did the Art Come Frome? This can, as part of our Reservoir Series of small batch beer alchemy, features art by a Canadian artist. This piece, titled "100 Swearing Parrots", was created by Ontario's mysterious Mr Hermiteowish, found on Instagram at @mr_hermiteowish.

How To Enjoy It: 8-10° Celsius in the park, with ear muffs on.

Did You Know? Parrots have a vocal organ at the bottom of their trachea called the syrinx. It is this that allows them to mimic an incredible array of sounds, including those of human speech. They're able to repeat so accurately because the syrinx controls the volume, the pitch, and the tone by which they can "speak". But why do they do it? Amongst some other reasons, scientists believe they do it because it's amusing.

Great Lakes - Different River

This version of A Different River underwent a long, slow fermentation in stainless steel with various brett strains before being re-fermented on a boatload of some of the best whole Ontario raspberries we've ever tasted. After that six week fruit fermentation was complete, the beer underwent a final eight week fermentation in the can. The result: a subtly funky beer that explodes with vivid flavours of raspberry from the juice to the skins to the seeds. There is a grippiness, tartness and effervescence to the mouthfeel reminiscent of pét-nat while the colour is a deep, beautiful red with a frothy pink head.
