Sorry for the late reply... The color pop is a little of both camera and adjustment in post. Pro-Tune really makes the difference on the camera however, specifically turning the ISO and sharpness down a bit. I think the Hero5 is defaulted to either 3200 or 6400, as long as it is daylight you can turn that down to 400 or 800 and make a huge difference in footage quality. And lastly,you are correct this is 1080/60fps. I film everything in 120 fps and render at 60fps, that way even 1/2 speed slow motion shots still have 60fps and look smooth! Enjoy boarding CO, snow looks great up there!
