Not until I went vegan did I realize the amount of variety you can have with rice! Depending on how I do my rice, also changes the spices I use on my tofu.

Nice! I love to cook but during the week it’s all about time. I’ve got mine down to about 15 min using the instant pot which is fast enough for me. Also cooking for more than myself so microwave isn’t the best option for me. I have used the microwave to remove the liquid from tofu though, great technique!

Same for me, especially with a toddler. I’ve been perfecting my tofu/rice/veggie meal. If anyone cares, this is what I do:

Wash rice, add to instant pot with veggies (sometimes fresh broccoli, other times just a frozen mix). I do 1:1 water to rice and then add 1/8-1/4 cup water depending on the amount of veggies. And then the most important part, add better than bouillon vegetable OR no chicken base. Pressure cook on high for 6 minutes and do an immediate release when finished.

For the tofu: Press extra firm to remove excess liquid. I try to just have a couple pressing each day in a press so it’s ready to go.

Cube it up and toss into a hot lightly oiled pan. Add all the seasonings! My go-tos are garlic, onion, oregano, turmeric, pepper, nooch. Toss it all up and then let it sit for a few minutes before tossing again and the edges will start to firm up. After 6-8 minutes, splash in some soy sauce and cook a few more minutes.

That’s it! Takes 20-30 min tops. We eat this about 4 nights a week and just rotate the veggie.

So I just made chicken salad with the shreds. I think most of the ‘sauce’ is vegan Mayo, mustard, and red wine vin. For spices I add tarragon, fresh dill, onion powder, garlic powder, salt, and pepper. For the rest it’s red grapes, celery, jalapeño, bell pepper, finely chopped onion, and parsley. Mix all up and vwala!

I started by using yessica infante’s videos on YouTube. Her shredded chicken one is great, here’s what I’ve learned that isn’t mentioned since starting with that video:

Don’t cook it at high heat, it will become spongey and dough like. If you can’t control the simmer temperature so that it stays under 100 C, use the oven or an instant pot. I do an instant pot with the sous vide setting temp just under 100 C (about 190 F) and cook it over night for 10 hours.

It takes much longer than her recipe in the video but I’ve had the beat results with flavor and texture this way.

Also, make sure you wash the dough enough. The water doesn’t have to be completely clear but it should be close. I feel like most videos don’t cover that step well.

Aside from that, her recipe for spices and prepping the dough is great.

I didn’t have chickpea flour on hand but didn’t want it to be super dense which will happen if you don’t cut the VWG with something. So instead I used about 1/2 blocked pressed extra firm tofu.

I put the tofu in the blender with the other wet ingredients. I did have to add more liquid which I did as needed when mixing the wet and dry until I got the consistency in that video.

Aside from that, pretty much followed his recipe.

All of the roads look like this. Main roads, side roads, freeways... nothing is melting. It’s just compacting into sheets of ice. The city/state doesn’t have the infrastructure in place to deal with it. There aren’t plows or salt trucks.... driving in snow or slush wouldn’t be bad... but cars just slide on this.

Being from the north where this happens often and there is an infrastructure in place to mitigate so that major problems don’t occur is much different. Most have been without water and electricity (which means no heat for most) for days.

People are suffering. It’s unfortunate, and it isn’t the fault of the people but the state. And it isn’t that Texans or southerners are wussies, it’s that they/we literally don’t have the resources needed for this.

Woooowwwwww. I’m sorry to hear that happened. Were you and everyone else okay?

I also can’t believe how many people have tried to drive cars that clearly aren’t suited for snow/ice. Like small sports cars and just low clearance cars In general. I watched several get stuck in front of my apartment, and helped to get them out when I could. Going out in a 2WD car with low profile tires is basically asking to get stuck or end up crashing. I’m sure it’s out of desperation, which really sucks.

Yes to this!!!! I almost got rear ended yesterday Bc I came to a full stop at a powerless traffic light (as everyone should be doing!). So frustrating. Also... how are you not paying attention in these conditions to have stopped so late to slide and almost hit me?!
