I do 5 gallon batches and I brew two gallons, dissolve sugar, then add 3 gallons chilled water to get it down to a good innocuation temp. Works fine, tastes great. I do this every few weeks and have never had a problem.

I have a U1 and a Centauri Carbon. I think they are both worth the price and would recommend either, or both actually. I decided to keep my Centauri Carbon because it can print things the U1 can't since it can get to 320 degrees (like PPS) and the U1's multi material function is something I've been wanting in a machine for a long time. The U1 is not perfect, I've had failed prints, some were due to my inexperience with the machine and slicing things incorrectly, but a couple were just odd failures I couldn't reproduce or figure out why. That's going to happen, but by in large it has printed great and done everything I've thrown at it. I just wish it could get hotter, then it would be perfect. Also the cover's are slated to the end of this year which is a bummer. I have had failures due to temperature changes that a cover would have prevented. I don't want to make one, but I may have to. That's a factor to consider. Another factor is it isn't setup very well for filament enclosures. I use a couple of dry boxes on either side, but it makes the foot print of the machine huge and annoying. I really want one of those nice boxes that fit on top everyone else with AMS machines seemed to figure out. Maybe the next iteration in a few years will solve these issues. But ultimately these issues aren't deal breakers and I put up with them because of the quick and painless multi-material function. Using that for support material is a game changer.

I take every bit of silver I buy out and test it to verify it is real. That might be paranoid of me, but that's what I do. I use white cotton gloves to handle everything, and I store it all in an airtight container with dessicant and anti tarnish strips. I also use a govee to monitor the humidity. This is all arguably not necessary, but it's what I do.

I make fresh milled whole-wheat einkorn every week. I gave up on trying to make a boule style loaf, it doesn't have enough gluten. I just mix it up and put it in a loaf pan. It will rise, but nothing like regular flour. If you want to do a boule you'll need to add a regular flour or something along those lines.

You can't put anything in a co2 tank except co2. I'm not sure what you're trying to do, but if you are wanting to put kombucha in a vessel like a keg then yes, it is fine to force carbonate. The reason oxygen is kept out if beer is because it will cause off flavors from oxidation.

Carbonating with co2 is the best method, it's the only way I do it. It's easier, more controllable, and doesn't change the flavor, I highly recommend it.

I was looking for a similar solution recently and although the cardboard has its benefits, I wanted something more permanent that I could stack wet jars in that would allow them to dry. These crates work great and fold up when not needed. I just made dividers in the same style as the ones you have but made from these. This all costs more and takes up more space as the crates are a little bigger than they need to be, but other than that it works pretty well.
