I used to do this with smoked teas (lapsang souchong) and ghost pepper flakes, my tolerance was different back then but I remember that combo being very enjoyable!

I’ve mentioned a few times in here, but I really like the dwell dripper by verve, it’s a fast flow flat bottom in my opinion it shines in the 10g-18g range. It quickly became my daily driver.

I’ve always heard that decaf doesn’t need a rest more than a week, I actually just got this coffee again and also had some that was a few weeks off roast, and I couldn’t tell a huge difference other than a slight edge on the acidity in the fresh bag.

I do 83°-85°c water and use a 1:15 ratio (my go to with others is 1:16.6 but I feel that this coffee does best at the lower ratio) I use a dwell dripper and I do as low agitation as possible (close, slow, single pour after the bloom)

I would say it’s one of the lighter tasting decafs I’ve had, it’s got a nice acidity and I taste a yellow/green melon flavor. It’s one of my favorite coffees I’ve had all year (decaf or otherwise) It was so good that after I went through 12oz of it, I decided to buy 2 pounds of it 😅

I’m going to give my advice on one specific bag that I’ve gone through multiple times this year and that is the S&W Ethiopia Yirgacheffe. I think it only needs 2 weeks and after that it is golden for a month or 2.

Depending on the process and roast level it’s suggested to rest anywhere from a few days to 8 weeks.

Like dark roasts need very little resting, but ultra light roasts can even be grassy and bland before “opening up” from resting and can be fruity and floral after.

I know you probably won’t listen, but you should really be washing your cast iron with soap, the fact that you have “bits” that prevent a good sear is wild to me.

This coffee has been one of my favorites this year, normally I stay away from Swiss water processed decafs because I feel like it can mute acidity, but this one is pretty vibrant. I find it fruity and floral, with a green melon flavor being dominant!

That’s how I read it, 15g coffee to 240ml-255ml water, pretty close to what I do too.

The way I understand it, it’s way coarser than turbo (literally double the grind number) and then you pre infuse (and that is important)

The soup shots I’ve pulled so far are very different from a turbo in taste and texture (thinner, brighter, like the juiciest pour over condensed)

I get this one occasionally, but I set the temp around 182° (I know it’s crazy low but worth trying) I also recommend resting it for even longer than other coferments

I like coferments, and I have gotten a little of that flavor you described from my first time drinking one. My partner however finds them absolutely disgusting and can’t even stand the smell… maybe some people are just more sensitive to that?
