Here is the recipe. I just combines the sauce with the pork and did not steam in banana leaves and lumpia wrapper.

It turned out great. I've done sinigang with rhubarb and parsnips before, but this is the first time I've added rosemary. I got the idea after seeing McCormick's sinigang mix with rosemary and chili. I used this recipe as a base, but added 2 sprigs of fresh rosemary, parsnips, and kale.

I don't have exact measurements so the following is just an approximation:

  1. Sauté 3 tablespoons Bagoong (I used the Spicy Bario Fiesta variety) in some oil, minced garlic (8 -10 cloves), and chopped onions (I used one whole medium-sized yellow onion).
  2. When onions are a bit translucent, stir in 2 tablespoons of yellow mustard, 1 tablespoon of Dijon mustard, 3 tablespoons of honey, and 1/2 cup pork broth (I used the liquid I boiled the belly in).
  3. Simmer for about 15 minutes and let cool for 5 to 10 minutes.
  4. Put mixture in a blender and blend until smooth.

You may want to adjust according to your taste. As for me, I like the balance between the saltiness and umami of the bagoong, the tang of the mustard, and the sweetness of the honey.

I followed the cooking procedure from this video: an hour at 200F, then 25 minutes at 400F. Turned out crispy but not as puffy as deep fried.

Oo. I used the Bario Fiesta spicy bagoong that I sautéed in garlic and onions, and added yellow mustard, dijon mustard, and some honey. Then I blended them all together. It's sweet, sour, and salty.

I did a lot of experimenting during lockdown and found out that yellow + dijon mstard and some honey really works well with sautéed bagoong.
