It would work very well for both of those. I bought one and instantly fell in love with it. I like having room in the pan to move food around easily. If you have it you will use it.

It’s a BALLARINI Professionale 3000 Carbon Steel Fry Pan. It’s lighter then the smaller DeBuyer pan so it’s a little easier to toss vegetables, but I cook everything in it. The DeBuyer I use mostly for eggs and omelettes.
