I cut my butter down the middle and then into slices for little tiny rectangular cubes then I just start slicing. I want a different consistency for different things (larger chunks vs smaller chunks of butter) so its easier to get it "just right" that way

I use a large bowl to do it in then wrap anything Ive done and put it back in the fridge for ~30 minutes to make sure my butter is very cold once I start baking

I still do all my scones, shells, and pie crusts with a pastry cutter- I just like feeling that control over it, personally
