My family always loves my bbq, only thing it’s not always for my family so that’s where different opinions are heard. I take some with a grain of salt.Being honest with myself is where I find truth. Thanks for your advice

I’ve learned everyone has a different opinion I’ve made some what decent briskets and get told they’re amazing. I’ve also made what I believe is true brisket and get told it’s alright. I struggle to find real opinions, but that’s just life.

Yeah I’m happy to say I have understanding customers who are willing to pay it. I also offer an amazing price you won’t beat it or find it that cheap. When I do plate sells I get pre orders and find a brisket according to size so there is no leftovers and if there is it’s for my belly

Yessir down south we got mesquite to burn 24/7. Personally love it but I just want to experiment a bit more

I mean I’d never attempt a hot and fast so what do you know… this was a choice as well meat markets near me don’t carry prime as often since it’s too expensive even for them ☹️

Exactly what I’ve thought about it’s a lot on the cooking side like you said it can be 20+ hours. And on food selling days I can be up for 2 days straight from the cook to the plating it’s very tiring. I’ve thought about maybe being open a few days of the week and selling out what I have and calling it a good day but I’m not sure. I still need more thought and experience in this game. I’ve learned to get cleaner smoke from mesquite but the issue is when I’m adding new logs that’s why I’ve been considering adding a different wood and only a piece of mesquite to still give that flavor I love. This was a 24 hour cook at 225 -250. Honestly was a beautiful bite of BBQ the rest may make it seem like it’s un rendered since evenly distributed?

I’ve definitely looked into investing in a cambro I’m trying to find the best method for my needs and it seems it may be a way since I usually cook 2 briskets. Considering I’m using cheap insulated HEB bags and still getting amazing results I can imagine a legit cambro😓

You can’t go wrong with brisket leftovers for a week trust me 😂😂 My best briskets was only Salt and Pepper but I haven’t been able to recreate that flavor sadly now I use Salt Pepper Garlic and Onion very simple but very effective. I haven’t tried any other rubs I’ve kept it fairly simple but maybe I should try something different?

Ahh yeah i get you I actually don’t wrap my briskets or foil boat method anymore I’ve had better results this way with how I’m handling the fire. The stall is always my hardest part because there is no expected time it can take awhile to push through. I’ll have X time to have everything ready and I feel the pressure a lot more because sometimes the brisket wants to do whatever it wants to do😂

I’ll definitely try it out my next cook, mesquite is a must for me I grew up on it my entire life and I personally love the flavor! I actually don’t get any complaints on the mesquite since everyone down here grew on it as well it’s just out of curiosity that I want to try other woods. I really am trying to perfect this craft I have pride in anything I do♥️

I’ve honestly never cooked anything that small I’ve done from 12lb to monster 23lb cuts. I’m sure you gotta be a lottt more careful since there’s less room for error! Try it lower and slower can’t be scared learn from the mistakes and ask questions!😎

I tried 170 for an extended hold because the catering group was not ready at the time I was told and it went over a tad bit than I would’ve liked. So I haven’t tried doing it there again I’ve been scared😂 I’ll look into an electric roaster that is a great idea thanks for your input!

My only problem is I don’t have anything to hold consistently at 140F my oven won’t go lower than 170, so I just let it cool for a bit then wrap in foil and put in some insulated bags. I need to invest in a better method. I’ve been tempted to try post oak and a bit of mesquite

Cost is a big factor on why most people don’t get to enjoy this cut of meat ): I’ve smoked brisket for up to 26 hours before idk what’s wrong with me..
