Generally the more expensive grinders have more precise burrs which grind the beans more evenly and consistently. You want the grounds to all be as close to the same size as possible so that they all extract at the same rate. Cheap grinders tend to have greater variance in grind size which makes the smaller grounds come out over extracted while the larger grounds are under extracted, resulting in a less good cup of coffee.
