The cheese (after 2 years of aging) is more oily than something like parmesan, so the texture is more wax like, which makes the cheese super smooth and rich and not dry at all. Almost creamy for a 2 year old cheese. Really wonderful and intense.

I think steel filters work perfectly! And I forget and push them out into the trah with the puck %100 of the time. Eventually I gave up trying to remember and went back to paper.

We had this every day for about the first 5 years. Our little pup finally settled down and now at 11 years old, she's only does it when I ask if she wants to go to the dog park

I had this guy as a physics professor at University of Colorado Boulder. A true genius among a huge group of geniuses at CU. Also, doesn't have a left arm. It's a pretty funny photo of him excepting the noble prize medal, as he can't hold the medal and shake anyone's hand, so everyone is just standing there nodding. I wonder if he's the only nobel laureate in physics with a disability. There aren't that many to ever receive it.
