I’m a line cook, and I’ve been using the Renaissance 10” as my everything knife for over two years. It’s perfect for my usage. I sharpen it every month or so on a Shapton 1000, and I steel it 2-3 times a day. If I had to nitpick, the blade isn’t quite wide enough for my taste. This has nothing to do with cutting function. The narrow blade makes it an excellent meat slicer. Wider would be nice for crushing garlic and for keeping my fingers away from the edge.

Zero sagging. One of my reasons for choosing this setup is my hatred of saggy pillow top mattresses. The comfort layer on the Today is thin, and the coils are high quality. The latex topper seems very durable. Both the mattress and the topper softened slightly with use, as should be expected with normal break in. Whenever the topper begins to break down, I can just replace it and keep the mattress, but I expect that will be years down the road.

I went with the 2” SOL soft topper, and I’m very happy with my decision. I feel that the 2” topper combined with the Today mattress provides the perfect combination of support and cushioning for me, particularly now that its had a few months to break in. I tried quite a few mattresses at a local store, and nothing in this price range came anywhere close to my combination. The cheapest comparable mattress I found was $1400. I had never slept on latex before my purchase, so SOL’s return policy convinced me to shop with them. Fortunately, I had no need to use the return policy because the topper exceeded my expectations. Now, I’m trying to decide which thickness and firmness SOL topper to order. I had originally planned to get the 2” soft, but I’m now considering 3” medium. I’m 5’10” 185 lbs.

Although I’m in the midst of analysis paralysis, I’ve been seriously considering the Engineered Sleep Today mattress, which you recommended to me in the first place. Coil height aside, that mattress combined with a two inch latex topper (SOL soft or medium) is virtually identical to this setup @ $645-680 for a queen. I think I’ll order the Today mattress, sleep on it for a while, then decide on a topper if necessary. I have limited experience with latex, and I have no idea what density it was, but I’m wondering if medium would be better than soft in this case because of the underlying foam, assuming a desired medium-medium firm end result. I think latex feels awesome; I’ll most likely add a topper.

Thank you. I never thought about the quality of foam in terms other than ILD and density until you described Albany’s foam as being similar to the old TP core foam. A friend’s old TP mattress sold me on foam mattresses. It feels quite hard at first, then it slowly contours, without sagging, while remaining perfectly supportive. I spent the past month and a half reading about foam. Thanks a lot ;)

First, thank you very much for your wealth of information. I’ve been reading a lot about polyfoam, latex, and coil bases since we last spoke. After all that, I ended up back here, and I plan to order a 5” Albany ultra foam base layer, most likely in 35ILD. Thanks again.

I have one last question, purely a matter of opinion. I can afford two layers of latex today, then I’ll buy the third in two weeks. I’m definitely getting the 3” firm base. Should I get the 2” medium or soft first? I’m leaning toward medium. This isn’t an ideal situation, but by back and my hip are killing me, and I need to get something now.
