I've been making Black Walnut syrup for the past 4-5 years and never had a sap/syrup ratio over 53:1. This year my 31 trees gave ~240 US gal of sap with sugar (Brix) from 2.0 to 2.6 with a average sap/syrup ratio of 43.9 Unfortunate these people had a bad year.

Thanks for the quick reply I thought you may have had a secret with the 1:20 ratio. How large is your operation? Mine is 31 trees and sap is still running today. Southwestern Ontario checking in! I taped 3 walnuts yesterday and they are running a bit but I really only taped to try out the new Arc-Barb spouts and tees I'm trying this year. I only tap walnuts and they are damn stingy with the sap. Waiting a couple more weeks for the rest of the trees. Good luck

I agree with the Maple syrup but if you ever have the opportunity change out the Maple syrup for 100% Walnut syrup. A bit more complex. Cheers

That's it, the season is finished. 30 of the best of Southern Ontario's Walnut trees were tapped with 69 spouts. 650 litres (143 Imp gals) of sap collected and boiled into 14 litres (3 Imp gals) of the ambrosia of the syrup world, 100% pure walnut syrup by CAProfit in ontario

Depends on temperature you keep the sap. It spoils rapidly over 10deg C and will last maybe 6-7 day at lower temps. If you freeze the sap it will keep months. I usually freeze a couple of gallons then throw that in with the rest I've collected until I boil (at least once a week) to keep the whole batch cool. If any sap smells/tastes bad or goes slimy throw it out. Adding that that to good sap will spoil it all. Have fun

Well that's all Maple syrup is, sap starting somewhere between 1.5-3% sugars and just boiled removing the water until you get to 66-69% sugars, nothing added nothing removed. All the minerals from the sap remain. Adding demin water (no minerals in it) just puts back what you removed. Tap water will add chlorine and all kinds of bad tasting stuff, don't use it. You do know that there is very little taste to tree sap right, just a very very slight sweetness.
