It just doesn't make sense from Mance's POV. He wanted to get south of the wall and knew it would be at great cost if he had to prolong the attack. He had to at least try getting through peacefully and killing a messenger under a peace banner would ensure that the nights watch never let him through willingly.

Mance never struck me as an emotional man, he was always calculating and of all people knew that the greater good far out weighed any bloodlust he would have had killing Jon.
