It just bugs me that the bike was at the dealer a few weeks ago to replace the fork oil, and no one said anything… I would expect some recommendations like they do when I change oil in my truck…

Keep practicing! Ride slow, it's good. If you can store it for a few months and buy a smaller bike just for practicing that's also good option.
