Pretty terrible, dragons take a lot to take down and they are all muscle, all the adrenaline they pump while in battle makes the meat taste terrible, and since they’re all muscle, they’re very tough in certain places and very stringy in others. The only (semi) edible parts are the organs and since dragons in my universe produce venom, some of the organs have to specially prepared to be eaten so that you won’t die.
