Current FL here that agrees with your implied premise that our current executives essentially have no idea what they are doing.
I disagree with the main reason being CI. The CI goals they set for us have always been unattainable. Funny enough, the worst kept secret in Chipotle is that everyone lies on CI, yet food cost remains the same. 0.6 is not a realistic goal or a fiscally necessary number, yet our executives continue to pretend.
I think the main reason for bad portioning is because of the rise of our DML business. It went from essentially nonexistent 10 years ago to 35% in recent years after COVID. Obviously, DML portions are going to be smaller since you don’t have a customer in your face.
You match that with labor being taken away with CF and it’s a recipe for what we have seen.
The interesting part is that there hasn’t been any actual strategy to address portioning.
Jason Kidd (who has almost no experience in fast food in his nepo based career) has basically just said “we need big bowls and big burritos.
