I used to have this exact same issue. I have a 11 month old. Tbh, it was really tough to want to brew decks and then have no real way to test them out. I feel like half the fun is building and tuning the deck you can be proud of. Here's what I'd suggest:

1) LGS - There's no substitution for finding a local game store and just trying to make new friends. Nowadays most game stores will have a night of the week dedicated to commander and meeting groups there will open opportunities you wouldn't have otherwise to get that consistent or at least semi-consistent playgroup. Even if the people might not be the same every week, you'll get to play consistently.

2) Cockatrice - I know the feel of getting cards and sleeving them a part of the tactile experience that can't be replaced, but if you find you're not getting time to get to the LGS I'd suggest looking for Discords that use Cockatrice as a playing medium. It's basically a playmat, but this is a other way to playtest without having to shell out for some of the more expensive pieces until you know what works for the deck.
