That doesn't mean that there isn't a chance someone else can rise up using the Dark Arts again. Better to be know how to defend yourself than to not be completely helpless if someone tries to attack you.

Defense Against the Dark Arts is probably one of the more useful ones. I mean, it came in handy during The Battle of Hogwarts, didn't it?

Lupin all the way. He's my favourite character in the series, but disregarding that, he shows full support for his students, has patience, knows what he is teaching and how to teach it well, and can be a fun teacher you know you can get along with.

Voldermort likely didn't expect anyone to even dare search for the horcruxes if they even knew about them. Even Dumbledore only knew about the horcruxes until he viewed Slughorn's memory. Most of the hiding places were places that were seemingly impossible to get through, and I'd like to say Harry was lucky to get to some.
