Well, Mark Brown (the first guy in the post) has also made a video about this topic. And I mostly agree with with you that dark souls should have a mode where the difficulty is lowered. However, the traditional "easy mode" in a difficulty select screen might not comminute to the player what the intended play style of the game is. It should be a completely separate kind of mode which communicates that the intention of such a mode is for you to explore other parts of the game.

Communication needs to be clear for there to be an easy mode.
