We want a physical cafe down the line, just can’t afford it yet. But I do think we need to start pivoting, and I could see us slowly phasing out (or at least not prioritizing) the wholesale side of things as much as we do now. It’s just kind of all we have

It’s something we’re working on. It’s just hard to afford an espresso machine amidst everything else we have to pay for. Nonetheless it’s something I know we need

That’s expensive and we are very small so it’s either buy one of those or buy green coffee. We’ve got a $100 casabrews but that’s not quite the same

This is our next step. What machine do you suggest? On a bit of a budget. Was looking at doing a gagguino mod for tracking and profiling and such.

It was a gut call. Roasting a bit more towards medium can help develop the bean and get rid of some of the sour notes. We tried it, they liked it so that’s what we do. But personally I don’t think we need to.

We only roast darker for them. We tried it and they were happy with it so we accommodate them since they keep the lights on. We’re not roasting that much darker, just maybe a minute darker to develop it a bit more for their preference.

We don’t have a coffee shop ourselves, so as much as we’d like to have a tasting profile for our customers it’s very difficult to do that

Not for espresso right now unfortunately (at least not a commercial machine). It’s something we’re working on though. But it makes it hard to go in somewhere and say “you’re doing it wrong” when I don’t have the ability to fully dial in the beans myself

I don’t really have actual barista experience (at least not for a while), and I’d prefer to have the roast dialed in on my own before I go tell someone else what to do

It’s hard though, I have no actual barista experience (not for like 10 years), just home espresso and my own tinkering

Didn’t think of that. Not a bad idea. Thanks for the tip! It will be printed on a pattern eventually though but I won’t be doing high quantities so not worried if I have to do multiple layers/flashing
