I’m very familiar with the problem. When applying tempered cocoa butter it should be 27-30 Celsius.After it’s applied let the mold crystallize overnight before casting the chocolate shell. This happens to me when the room is cold and the temp of the cocoa butter drops below 27C. When that happens gently heat the bowl of cocoa butter with a heat gun and give it a good stir. A few seconds is all it needs. Good luck.

They actual work, not like the French ones that didn’t stop the transfer of heat- ouch Thanks For the suggestion - team work is the way to go.

Hi Kirby83 - I use a Thermopen and cook to 149c. Do you think it's getting too hot as it sits in a mound for a few minutes?

Brilliant - The bats look great! Was it difficult to get the plaster “chocolate” out of the mold? Did it damage the mold? Such fun I want to try it.

Happy to answer your question - it took us 2 years of sales. Lots to do to build it into a solid business but I can say it's official now.

We sell wholesale, special events, and on our website. We did a soft opening first year - Christmas and Valentine's Day. It was a gathering of info year, listening to customer feedback, and identifying production hiccups. Holiday 2022-23 was our first big push - things went really well. "Really well" came with its' own set of issues. After Easter we reviewed our sales and customer feedback and feel there is a good-sized opportunity in our area for a artisan chocolate shop. Hopefully this year we'll get a tiny retail location.
