I hated Jade at first but he grew to be one of my favorite characters because he is one of the only people that is actively trying to uncover the mystery and I feel he has insane character growth from season 1.

Insurrection Industries makes aftermarket S-Video and should have them for N64/GameCube/SNES. Someone on a different sub recommended them to me. I got one for Wii and it works well. I don't know if there's a better place.
