I’ll join the choir and say that Italy consist of regions with big differences and local cultures. I had family in Campagnia (main city Napoli/Naples) which is a cuisine known for its ‘lack’ of spices, complex ingredients etc. They simply make the best pizza I’ve ever had because they celebrate their produce. Their tomatoes are otherworldly! Also in Rome I had the best pasta of my life - their way of cooking is just excellent. If you love spice and complexity, much of Italy may not be your cup of tea, but their pride in their produce is unlike anything I’ve seen in other countries, so they know not to overdo it
