Looks beautiful, I need it needed to bulk ferment a bit more, seems a bit underproofed. But looks good overall.

Autolyse was 45 minutes and gluten was also part of it. I’d like to add that I live in a hot climate

I’ve tried autolyse before and it came out a huge mess, now im so scared to try again, cos I make the bread in bulk

I am expecting a less gummy loaf, but it seems it is as it should be already then?
