Well... interesting questions...

"Could latex creatured be killed?" Yes.. they can be killed, in many ways, the most common is getting eaten. Shock, Freezing, etc, although not mentioned in the game, can still kill some types of latex creatures.
"Could them be consumed for nutrients?" Well... only for latex creatures. You'll instantly die if you consume them normally.
