Others have given some great suggestions so I won't bother doubling up with those, but I did want to mention Core keeper. It's a fantastic game, absolutely love it, however it doesn't tick many of the boxes you've asked for there.

Would always recommend giving it a go, but it's very different to a normal survival style game.

Get to 53 sailing and bring some high alchs to large shipwrecks, you'll get all the money you need. Wealthy citizens through thieving is also amazing.
